Left over egg whites..

..got the family over today, so making pavlova with egg whites I have left over from yesterday.

However, I have 6 egg whites. The pavlova only needs 3 egg whites, so what shall I do with the other 3 egg whites???

I know I could make extra meringue, and it keeps well, but I don't have suitable containers to keep it for the next couple of weeks... Also, I just won't have use for that much meringue in the immediate future. If is there, the kids will just want to eat it, and I don't tend to give them that much sweet stuff during the week.

Any ideas, gratefully received.

Freeze them! Pop them in a sandwich bag and freeze them until you fancy more meringue, or could you make an egg white omelette for breakfast/lunch tomorrow, or make some macaroons to have with tea after lunch :)

freeze it as it is??? Really? this is a good tip!
Ended up doing some extra meringues this time but for next time that is a goody to know.....

Chocolate maccaroons

Chocolate meringues (fold in melted choc and honey at the end)

Plain meringues - they keep for aeons.
