glut of tomatoes??

My neighbour gave me a big bag of toms and apart from pasta sauce I'm stuck with what to do? Any ideas? TIA

Oooh a nice warming tomato and basil soup, or ratatouille (sp?) as a nice side dish

I made slow roasted tomatoes, as recommended on another thread. they are delicious in all sorts of salads and pasta dishes.

Mine weren't really done after 3 hours (the recipe uses cherry tomatoes) but I had to go to bed. Switched the oven off and left them sitting in there over night planning to give them another couple of hours in the morning. They were done in the morning...

That's good I was thinking mine will take longer as some are normal size toms. I've got them on very low fan and will just forget about them for a while.

what would be the best way to preserve them?
Make a sauce then bottle it?

you can freeze the sauce I suppose? The slow roasted ones are lovely, just whizzed some up with basil for pasta sauce and dss inhaled it Smile

I make tomato sauce in big batches and freeze it - freezes well.
