Can i make an arrabiata sauce by adding Chilli flakes to a basic tom sauce or does it need something else? It's just that I've got Chilli flakes in the cupboard and don't want to go to Tesco if i can avoid it Grin

slimming world one.

2 fat red chillies, deseeded and finely chopped (suppose you could just subsitute with the chilli flakes, no idea myself)
onion, finely chopped
2 garlic cloves, peeled and crushed
400g jar of passata
7fl oz of chcicken stock.

saute onions, chilli, garlic until softened.

add passtata and stockm bring to boil, and simmer for 15-20mins until reduced and thickened.

season to taste and serve.

It would be fine - have done it before on finding I'd run out of fresh chillis.

This is how I do mine usually -

thinly slice a red onion into half moons;
slive a red and a green pepper into long thin slithers;
crush some garlic.

Fry them until just starting to brown.

Add 2 chopped red chillis (or about a teaspoon of dried flakes) and s&p.

Add a glass of white wine. Cook a for a minute or two.

Add a carton of those really, really finely chopped tomatoes and about half a carton of water.

Add a teaspoon of brown sugar.

Cook for about ten minutes then add olives and just warm them through.

Lots of fresh parsley to serve.

Thanks for the recipes. I just made a basic tom sauce and added a few Chilli flakes and it was perfect (and far better than some restaurant arrabiata's)
