I need some new ideas

Anyone got any good chicken/pork casserole type recipes.
Preferably ones that are "put in pan/oven/slow cooker and leave types, but any will do.
Am getting fed up of cooking similar things all the time

Chicken breasts cubed with some diced onion and red peppers cooked until done. Add a spoonful of cream and some tarragon and voila.
Pork with juniper berries and apple in the slow cooker.

are you going to tell us yours then? mine are

chicken or pork, tin of baked beans, glug of white wine, 1/2 mug of chicken stock, thyme, garlic clove, glug of tom sauce sliced onion and cook in over or slow cooker. . thicken with cornflour in water if bit runny towards the end

chicken with mustard and tarragon - chicken bits, chopped onion, garlic clove chopped, 1 teasp dried tarragon, 1/2 cup chick stock, mushrooms sliced, some cream, 2 teasp dijon mustard, slapsh lemon juice. put everything into slow cooker excpet cream - which goes in about 30 mins before the end, and then at very end dash of lemon

baque chicken - fry 1 clove garlic, 1 chopped onion for 1 min. add red of yellow pepp cookd for 10 mins, brown chicken, put together with chorizo, 100ml stock, glug sherry or white wine, 1 tbsp tom puree, 1.5 teasp paprika ,simmer till chicken is cooked chopped parsley at end

Chicken with lemon and thyme

I use chicken thighs and drumsticks (skin and bone on); cover with olive oil, sling in a good big handful of fresh thyme and about 3 lemons per two people - Cut the lemons in half, squeeze over the jiuce and put the lemon halves in and around the chicken. Lots of salt and pepper. Cover in tinfoil and cook in hot oven for half an hour then remove the foil and cook until the skin is nice and crispy - another 20-30 mins depending on the chicken.

Serve with green salad or veg and nice crusty white bread to dip into the liquid. You can also add potatoes into the dish and they will cook in the juice (but this offends my 'mixing carb and protein' rule)

Diced pork steak with casseroled with onion, garlic and some mango. Could poss add a bit of grated root ginger or finely slice chili.

fry slices of pork with onions and peppers, then add some jerk seasoning and at the end some maple syrup. Delicious with rice and peas (just cook an onion with some thyme, add basmati rice, a tin of kidney beans including the water from the tin and a tin of coconut milk, stir and cook for 20 mins on low)
