Bread flavours

Has anyone got any nice ideas for flavoured bread?
I have tried pesto and olive - yum!
I have a bread maker so anything I can add at the begining or put in the little seed dispenser, savory or sweet I don't mind.

Spinach and parmesan is lovely. Also cumin and coriander seeds.

Olive and sundried tomato is delicious as is cheese and onion bread.

You could swap some of the white flour for something like cornmeal or rye flour for a different flavour and texture. Or try sweetening with honey and adding dried fruit. You can use orange juice for some of the liquid and add orange zest and some marmalade.

Red Onion and Walnut Bread

1.5 tsp fast action yeast
250g Strong white flour
250g Strong Wholemeal flour
1.5 tsp salt
1.5 tbsp sugar
25g butter
100g red onion, freshly and finely chopped
100g walnuts broken into small pieces
325ml milk

If using a breadmaker, add all the ingredients except the walnuts and onion in the correct order for your machine and set to a wholemeal raisin bake. Add the onion and walnut on the raisin beep.

By hand:

  1. In a bowl, mix togther the yeast and flour. Add the sugar and salt and mix well.
  2. Add the remaining ingredients and mix to a dough.
  3. Turn out onto a lightly floured board and knead well for 10 minutes.
  4. Shape the dough as required, cover and leave to double in size.
  5. Bake at 200C, gass mark 8 for around 30 mins

I should add that the one time I tried to make this by hand, I got a very delicious-smelling housebrick. But I'm sure with a breadmaker it will be fine Grin

I'v bought some rosemary and sea salt bread that was lovely. Especially yummy for dipping in good olive oil.
