chicken ideas please

brought a large chicken which was reduced today. i can proberly get 4 meals out of it (me & 2 ds) i normally go for the whole chicken as its seems better value for money but am running out of ideas, so what can i cook apart from curry, chicken & pasta, stirfry. boys will eat anything.thanx
anyone maybe have a nice chicken pie recipe?

Chicken tortilla bake perhaps?

Essentially you make chilli but using chicken chunks instead of minced beef, put it in an ovenproof dish, cover it with tortilla chips and grated cheese and bake for about 10 minutes.

What about Fajitas?

I do chicken pie quite a bit as the kids love it. We usually have it roasted on one day and then a chicken pie with the remains.

left over cooked chicken (obv!)
a can of cream of chicken soup or mushroom soup or some leftover chicken gravy
good shake of dried sage
salt and pepper
I also throw in some peas or sweetcorn or maybe a bit of brocolli

If you're using the chicken from raw, chop it into chunks and brown it in some oil, warm the soup in another pan and then add it together.

Heat it all together in a saucepan then pour it into an oven proof dish and pop a pastry lid on (i put little bits of pastry round the rim of the dish to give the lid something to stick too, cook in the oven on about 200 until brown.

I also do chicken dauphinoise

left over cooked chicken
potatoes (skins on, thinly sliced)
small pot of creme fraiche
salt and pepper
dried herbs (tarragon or thyme are good)

pile the chicken and potatoes into an oven proof dish, mix the creme fraiche with the herbs, salt and pepper and pile it over the potatoes and chicken. Cook in the oven on about 180 until the potatoes are tender and it's lovely and brown.
