just gotta ice dd2 birthday cake for tomorrow, she loves chocolate frosting, how doi make something like it? hopefully i have the right stuff in the cupboard.

Nigella's Chocolate Frosting

175g good quality dark chocolate
250g softened unsalted butter
275g sifted icing sugar
1 tbsp. vanilla extract

Melt chocolate in microwave (2-3 mins) or in a bain-marie. Let cool slightly.
Beat butter til soft and creamy (can use electric whisk), add sieved icing sugar and beat again til light and fluffy. Add vanilla and melted choc. and mix til glossy and smooth. Will fill, and cover top and sides of a 20cm cake.

I haven't used this exact recipe but have used a very similar one (can't remember which book it was from though). Agree with cod - Sara Lee ready chocolate frosting is easier!
