Anyone want to join me in a 'using up leftovers' thread?

I need suggestions that aren't soup or jam!
Been using /freezing everything but running out of inspiration.

I'm veggie but dh & kids eat meat so any suggestions welcome!

Also using up the produce from our garden/parents allotment/ some hedgerow stuff (waiting for blackberries at the moment! mmmm)

Casserole/curry/chilli/spag bol/ratatouille can all "absorb" a wide range of leftover vegetables.

Frittata/tortilla/spanish omelette can also use up lots of things, so long as there's some potato in it.

And most fruit can go into a pie or crumble, mixed up if you don't have enough f any one kind.

Oh and leftover meat can always be fried up with some veg and used as fajitas!

Arancini: left over risotto squeezed into balls and fried

Pasta fritters: left over spaghetti mixed up with beaten egg and cheese, fried.

Mix left over mash/crushed potato with anything and fry.

just fry everything, basically Grin

from 1 chicken:
roast chicken - meal one (you have veggies and veg sausage or equivalent)

chicken and chips or chicken salad - meal 2 (egg n chips or cheese salad)

chicken risotto with last pickings from carcass - make stock from the bones - meal 3 - plan this for a night when you're eating up a different leftover from the freezer!

If a very large chicken you could get fajitas from it too - yours could just contain the veggies and cheese. leftover veggies from this with a couple of tins of toms = spicy pasta sauce!
