Freezer stock-take anyone??

I have just realised how much food is in my freezer and decided that next week is going to be "eat everything in the freezer" week.

This is what we have....

MEAT & VEG
9 salmon fillets
1 gammon steak
500g mince pork
6 fillets of cod - breadcrumbed
2 x 200g pks king prawns
slice braising steak
leg of lamb
4 chicken breasts
1 pork steak
3 lamb steaks

MY HOMEMADE STUFF
spicy lentil soup
brown & white breadcrumbs
beef stew
6 sticky toffee cupcakes
chilli
big pack homemade meatballs
lamb keema
2 burgers
chickpea & chicken stew

I am not going to list everything but there is loads of stuff like fish fingers, fish cakes, lots of veg (beans, corn, peas etc)

I am not sure whether I should be embarrassed about the amount of stuff in there or proud that I am using my freezer to its full potential.

Anyone have more than that??

Anyone want to join me on eating their way through their freezer this week??

At the moment my cupboards and freezer are bare!

But only because i have yet to do the shoppping. Also my chest freezer goes through fits and starts of being full to bursting then emtyish (like now)

Think off the top of my head there is

scampi
kingprawns
pizza base
sausages
spicy chicken nibble bits (for when me and dp have a tipple)
bags of veg
chicken legs/thighs

and my other freezer just has icelollys, veg fishfingers and naan bread....hmm not sure what else tho.

Ps you will not need to shop for a fortnight with all that!

Holy shit your freezer is huge compared to ours. Without even looking (I can't be arsed, it's 10pm and it's cold in there) I can tell you I have:

2 x potato and leek soup for 3
1 litre duck stock
A small amount of garfish
1 kg cooked giant prawns
half a packet puff pastry
A packet filo pastry
Half a packet frozen peas
Packet frozen broad beans

I just bought 2 kg lamb shanks, 1.2 kg chuck steak and 200g stir fry steak, which will end up being turned into stuff and jammed put in the freezer this weekend. But nothing on you. no way you can eat your way through that this week. Are you a family of 17?

Ha,ha - No there are just 5 of us. Only 4 of us Monday to Thursday, tortoise.

You are right mamamia, that should do us for a fortnight at least. I had forgotten about most of the stuff in there but I have written it all down now so shall decide each day what I am defrosting for dinner!!

Defrosting the chickpea & chicken thing for lunch.

Grin Mary they are nice - I make a batch and then freeze them and put one in little DD's lunch bag in the morning.

Recipe is a bit weird but here goes..

Blitz 40g sultanas, 40g apricots & 40g dates in food processor.
Put that mixture into a bowl and add 30g light muscavado sugar, 6 dessert spoons syrup, 30g melted butter (or dairy free spread) and 140ml hot water. Give it a mix.

Stir in 140g s/r flour, 1 tsp mixed spice (optional).

Now, my dd is allergic to dairy and egg, hence the dairy free spread, and there should be one egg in the mixture but I miss it out and it is fine.

Put into cupcake or fairycake type cases and bake at 180 fan, for 15 mins.

Very moist and healthy!
