I salt the crackling then after about 30 mins of cooking the joint cut the fat off with a pair of meat scissors, then lay it flat on the roasting rack for the rest of the roasting time.

and always have shattering crunchy crackling.

make sure the fat/skin is dry before you put it in the oven. I also salt the fat beforehand as it helps draw the moisture to the surface.
