Just made this for DS. Fabulous and much lighter than most rice flour recipes. I suppose you could swap butter for dairy free marg to make it dairy free. I used goat butter.

CHINESE ALMOND BREAD
1/2 c. butter (1/4 lb.)
1/2 c. sugar
2 eggs, beaten
2 tsp. baking powder
1/2 tsp. almond flavor
1/2 c. coarsely chopped toasted almonds
2 c. rice flour
Cream butter and sugar together until light and fluffy.
Add eggs and continue to beat until the mixture is creamy.
Add baking powder, almond flavor and nuts.
Work in flour and form into a soft dough.
Turn into a well-greased and lightly floured 8 x 4 x 2 1/2 inch loaf pan.
Decorate top with split almonds, if desired.
Bake at 350 degrees until a delicate golden brown, and the loaf tests done.
Cool well before slicing.
