Frogs' legs recipes............anyone??

We are in the South of France and ds is desperate to try frogs legs so we have a big bag in the freezer and just need a recipe............

haven't a recipe as such but i think that i would prob poach them in a light stock
it's years since i tried them and i can't for the life of me remember how they were cooked
has ds also requested snails yet?
