Leftover roast beef - ideas please!

Hi

We've had a lovely roast this evening with friends, but DH bought enough beef to feed a small army. Any ideas on how I could use it tomorrow?

Sandwiches.

Shred, then add to stir-fry veg, black bean sauce & noodles.

Freeze best-looking bits for a 'quick roast' another day - defrost and serve with gravy (from granules), spuds, veg.

Oh thanks, like the stir fry idea..and wouldn't have thought of freezing it.

I make beef curry with leftovers either with a jar or from scratch if I can be bothered.

I do a curry with leftover chicken most weeks,never used beef though. Thanks

I always buy a joint of beef that is too big and slice the leftovers up into nice thick slices and freeze them in individual portions with gravy so the next time I want a roast dinner I just warm them up and it saves me roasting another full joint

I actually made a gorgeous pie out of it. Cubed the beef, fried onion and garlic, some stock cubes, ketchup, lea & perrins, mixed herbs and topped with some ready rolled shortcrust pastry from the freezer.

It was DELICIOUS. We liked the plates!

Second the pie idea. Chop up into bite size pieces, chuck all the gravy and left over veg in with it. Freeze.

Then take out and fry up with onion, carrot, herbs, and a small can of Guinness as pie filling. Put in a pie dish Shortcrust pastry on top and brown in oven.

Nice with mash and roast veg.
