need an easy chicken recepe pretty please!!!

Hi

I have some chicken drumsticks & thighs that need using up and want something easy!!

I have loads of veg, spuds etc...

Am kind of thinking of something I can bung in slow cooker but something that will go with rice if possible Smile

You could roast them - takes about half an hour on gas mark 7/220c. Brown by sticking in the pan on the hob in a bit of oil. Chuck on some herbs/spices etc. Add garlic, onion and lemon juice to the pan and stick in the oven.

this might not be what you're hoping for but i made this last night and it is yummy

fry onions in garlic, add chicken, sweetcorn, peppers, whatever you fancy

you need a sachet of taco seasoning ,or fajita seasoning, something like that - if you don't have that then a mixture of spices like cumin, chilli, cayenne etc - what you would use to make beef chilli

add that to the pan, stir through

add jar of salsa

add red kidney beans

alternatively add chopped tomatoes, spiced up with chilli,cayenne, jalapenos

if you have it, add a can of condensed mushroom soup - this makes it all a bit heartier but it's still nice without it

you can mix it all up and leave in the slow cooker (i don't cook the chicken and veg off first if i'm doing this) or just do it all on the stovetop - it's ready within 20 minutes

it's super easy and lovely with rice, and you can make it spicier if you like - it's like a kind of chicken chilli really.

Forgot to say it needs to be dairy/soya free as DD intolerant.

Fustyarse - that sounds truely yum Grin DD can't have the fajita mix as its got soya in but can try the mixture of spices instead...

This is what I normally do tbh with lots of lemon juice and roasted sweet pots, peppers & courgettes.

It is a firm favourite dinner in this house!!

Skin chicken and if you have a cleaver, chop in two (not essential.
Fry lots of finely sliced onions, ginger and garlic (and chilli if you like) slowly until transluscent..
Add chicken and fry then add 5 spice powder or a star anise.
Add about 1/4 bottle of fairly sweet sherry and a really good glug of soy sauce (Kikkoman best).
Allow to simmer gently for 20-30 mins.

Srve with rice and stirfry.

I would just turn the oven on and then, in a large baking tray (use the one that comes with the oven if there's a few of you) just add plenty of chopped up (or wedge-sized) potatoes (no need to peel) onions, garlic, lemon, veg (carrots, sweet potato, green beans..whatever you have) then add the chicken on top, give it all a good drizzle of olive oil and plenty of salt and pepper, then bake for 1 hour.

Serve with whatever you have - crusty bread, nothing, a salad...works with anchovies, olives, orange segments...anything

Tis probably long digested but i got a lovely simple recipe off here and tis lovely. Splash some soy sauce over your chicken in a roasting tin then top each piece with apple sauce (i make my own just puree stewed apple with a hit of sugar) or from a jar is grand then cover with tin foil and remove foil for last 10min just to brown up and tis lovely esp with rice and i love makin it extra saucey tis lovely!
