Spag bol and Chilli

ok i can cook, stews and curries from scratch but i have never coked spag bol from scratch i use a ragu jar Blush
and for Chilli i use Old El Paso spice mix Blush

can i have your recipes pretty please

Spag Bol

Fry 2 onions
Add 2 packs value mince
Fry until brown
Add sliced mushrooms
Add small tin tomato puree
Add tin tomatoes
Add quarter pint vegetable stock.
Cook for 30-40 mins.
Cook pasta 15 mins before end.
Mix bolognese, pasta and chopped beetroot.

Yummy!!!

For spag bol, fry chopped large onion and three crushed cloves of garlic. Add 500g mince and fry til well-coloured, then tip in a glass of red wine, a crumbled oxo cube, a tin of chopped tomatoes and a squirt of tomato puree. Add a spoonful of sugar and a splash of milk (takes away the acidity of the tomatoes!) Ideally, put in slow cooker and cook for a few hours.

My spag bol:

I fry about 3 or 4 rashers of streaky bacon, cut up into bits OR some cubed pancetta
Add a chopped onion - fry till soft
Add a few carrots - peeled and cut into chunks
If available, add a couple bayleaves
Brown a pack of mince (500g)
Add about half a big glass of red wine
Add 2 tins of chopped tomatoes
Add salt and pepper.

Then lid on, simmer for as long as you possibly can - the longer the better. 3+hours.

My chilli:

Fry a chopped onion until soft and a chopped chilli - green or red.
Add a good tablespoon of dried cumin, or more, or cumin seeds and powder. I can't emphasise the cumin enough!
Brown a pack of mince
Add 2 x tins of chopped tomatoes
(Jamie Oliver at this point adds some coffee)
Salt, pepper
Cover, simmer for an hour or so
Add a tin or two of kidney beans

You need to have a bit of pork in spag bol to make it taste really good - so some bacon or a couple of sausages alongside the mince.

I see the value in cooking from scratch for most things - but not chilli. You can't be Schwarz mix, for flavour or ease. I don't have it any other way. There goes my guilty secret.

I use Delias recipe which has mince, bacon and chicken livers as well as onion,garlic, red wine and italian herbs, you don't need any stock or mushrooms.

I use Jamie Oliver's chilli recipe. It's pretty similar to Hassled but also has cinnamon in and half a jar of sundried tomatoes in oil (and I add an Oxo cube, 'cos I'm slovenly).

'tis bloody lovely, much nicer than from a jar (I used packet mixes before, but wouldn't go back to them now).

Nigella's lamb ragu (from Nigella Express) is really easy if you have time to let it simmer and get reallly soft.Again, principle the same as Bruffin's- contains bacon too. I think that chicken livers are also pretty authentic but apparantly, never, ever, ever basil!

Good luck, it's easy and cheaper once you know how!

I use Gordon Ramsay's recipe. The ingredient list seems long but it's all kitchen cupboard stuff mainly.
I also add a glass of red wine, use Knorr liquid stock (instead of real stock) and a few (maybe three)squares of dark chocolate. It really makes a difference but is very weird if you put too much in.

Double up and freeze a batch or two.
