Lettuce soup recipe

I have a lettuce glut and am wondering if anyone can share a recipe for lettuce soup? DH doesn't like chilled soups so one that can be served warm would be fab.

I just use a good sized head of lettuce, an onion and a couple of potatoes. Cook it in chicken or veg stock with garlic and a few chilli flakes. Blend it when done and stir in some cream.

Or, sometimes, I use a head of lettuce, a pound of peas, an onion, chicken stock, garlic and mint. Blend it at the end and stir in some cream.

As Stressed said, but could also add spinach, sorrell, brocolli.... There is a fabulous recipe in the Aga Cook Book by Mary Berry, called "Fabulous Summer Soup" along these lines. It is a glorious bringht green colour (like Body Shop bags) and is known in our family as "Green Soup".

It freezes, yes.

Like Bike says, it freezes, but don't add the cream until after you have defrosted it. Creamy soups have a tendency to split when defrosted, so better to freeze first, add cream later.

I saute onion & potato then chicken stock and put in the lettuce right at the v end (usually use about 4 round lettuces) so it just wilts then blitz. I add lemon juice when I put in the lettuce, makes it really fresh and zingy (inspired by a greek chicken fricasee with lettuce and lemon). I love it, am going to make some tomorrow now.

I made batch and it was quite bitter. It was quite a peppery variety of lettuce, do you think that was the reason?
