carrots and parsnips

Have just been given a big bag of carrots and parsnips, any ideas of what to make with them other than soup?
Have got some freezer space ( but not loads), and there is only me, DH and nearly 1 year old dd at home.
Any ideas?

Carrot cake- can you make parsnip cake too? They are quite sweet so I don't see why not...

Parsnips (and carrots for that matter)make quite a nice mash if you bash them down with plenty of butter & black pepper. Some grated cheese on the top and popped under the grill... delish with sausages.

You could roast chunky-peeled carrots and parsnips in some olive oil with garlic and a few herbs roast and then freeze the results.

Grated carrot mixed with some mayonnaise, grainy mustard and some toasted sesame seeds makes a nice alternative to coleslaw.

Grated parsnip can be pan-fried into a kind of 'rosti'

Mashed together as a side for a roast is simple and tasty.

Ooh yes carrot and parsnip mash...fab!
And we are having a family BBQ next week for dd's 1st birthday, will be making lots of coleslaw I think!

Just looked at the parsnip and maple syrup cake too, even better, I have a tin of maple syrup from a holiday to Canada that has been sitting at the back of a shelf!

Littlemel definitely report back on how it tastes- I love parsnips but never had them in cake form before...

Gary Rhodes parsnip fritters - scroll about halfway down the page. With or without the blue cheese dip they are utterly divine - TBH I just use mashed blue cheese in bought mayo and it's fine.
I reckon they'd freeze OK as well but haven't tried to myself.
