Any one do anything interesting & not too time consuming with pasta for kids? Am thinking back-from-day-out & need to eat soon type thing?

Sundried tomatoes chopped up and thrown in.
Macaroni cheese with broccoli and sweetcorn.
Pesto, peas and chicken is a nice combination.
Chicken and bacon.
Tuna.
Meatballs.
And if all else fails, tomato ketchup and cheddar

Use different types of pasta in one dish to make it more interesting.

Carbonara is pretty easy.... drain the pasta leaving a little water in it. Return to the still-hot pan with some mixed up egg yolk, cream, parmesan, chopped ham and a little pepper. Stir into the pasta until the egg/cream mixture has thickened

Pasta with homemade pesto only takes about 13 minutes from start to finish.

If they like mushrooms, fry some in one pan whilst cooking the pasta in another. Onions with the 'shrooms if wished. Then when they're all lovely and crispy and brown add a pot of garlic and herb Philly or a packet of bousin, a splash of milk to thin it and a load of black pepper. Mine don't like mushrooms but dd2 likes this just with the cheese and milk and some frozen peas stirred in.

this lovely

i make a tomato sauce I keep ready in fridge all week:

tin or tow of chopped toms
2-3 whole garlic cloves, peeled
a few good glugs ex voo

simmer and reduce for 20 mins. fish out garlic and throw it away. blend. keep in airtight container in fridge.

stir into hot pasta fridge cold and grate over lashings of parmesan. add bits of fried pancetta, cooked broccoli etc as the mood takes you

yy to pesto, basil, pine nuts, garlic, ex voo, salt and pepper and parmesan blitzed in chopper for a few secs. good with leftover chopped roast chicken

Our family favourite is creamy pasta.
Mix a handful of grated cheese into hot pasta add sliced sausage, bacon, mushrooms whatever you fancy really and mix in a pot of creme fraiche.

Takes as long as the pasta takes to cook.

My quick easy pasta sauce for when I forget to plan anything/am too tired to cook is passata simmered with whatever frozen veg I have in the freezer (usually peas, sweetcorn & broad beans) sometimes fry off some lardon at start if have some lying around, sometimes stir in a bit of red pesto at end...is different every time, takes just as long as pasta takes to cook & is always yummy

I keep a stash of 'puy lentil bolognese' in the freezer- chopped toms, herbs, wine, puy lentils, peppers etc.
