Does anyone have a cookie dough recipe?

[Conundrumish]

I have lots of nice cutters to use but my dough recipes either make nice tasting but tricky to roll cookies, or easy to roll but dry tasting cookies.

Does anyone have any suggestions?

3oz Brown Sugar
1 Egg
1/2 Teaspoon Vanilla Essence
6oz S.R.Flour
pinch of salt
4oz Plain Chocolate, or Chocolate Chips.

250 g flour,
1 TL baking powder,
75 g sugar

1 pinch of salt,
1 egg,
125 g melted butter (unsalted, or leave out the extra salt)

spices as desired, cinnamon, almond essence, vanilla essence, black petter, nutmeg, ginger...
