DH has just harvested crop; black spots of mould coming how do I preserve them?

You could peel the garlic cloves, rinse with salted water, pat dry and store them in bottles of olive oil with a few peppercorns and sprigs of rosemary. Then you get garlicky/herby olive oil and preserved cloves...

For 'bottles' read 'jars'.... those Kilner-style, clip down ones with a rubber seal are excellent

If the bulbs can lay out in the sun for a day or two to dry out they should be fine. As long as the skins go papery the mould will lack moisture and die. Or you can also freeze the cloves. They defrost really quickly, or can be grated from frozen. The oil idea sounds lovely though. I'd be tempted to do a bit of each as they'll all keep differently.

Please be very careful, as garlic cloves stored in olive oil at room temp can develop botulism.

I think if you refrigerate the jar it should be ok. The danger seems to be when air/moisture enters the jar as you spoon some out.

I'm sure there must be a safe way of doing it if you google methods.
