what do I do with spring greens?????

and watercress?????

My dp picked them up off the reduced rack in the co-op to make up a milk voucher & I haven't a clue what to do with either.

Any ideas?

Spring greens is basically cabbage.

Chop and boil, or saute with a knob of butter, salt and pepper and a little water to stop it catching.

Watercress can be chucked into a salad, nice and spicy. Or you can make a soup, with spuds.

ooh, I didn't know that. Makes life a lot easier now I do!!& I'll use the watercress in Monday's salad for tea.

Spring Greens with Bacon and Garlic Remove any tough stalks from the spring greens finely shred and wash thoroughly. Finely chop some smoked bacon and crush some garlic... start this cooking in a little olive oil/butter. Stir in the shredded greens and pop on a lid. Simmer for 3 mins. The moisture on the leaves will steam the greens and the bacon/garlic/butter is delicious.

I like watercress in a frittata (thick omelette). Whisk 3 eggs in a bowl. Cook 2 or 3 baby new potatoes and slice thickly... add to the bowl with a couple of finely chopped spring onions. Stir in plenty of chopped watercress. Transfer this mixture to a small, oiled omelette pan, cover with a suitable sized lid and cook until the watercress wilts and the bottom is set. Then sprinkle on a little grated cheese and pop the whole thing under a grill until bubbling and golden. Incredibly rich in iron!!

I like leafy stuff like that stir fried in olive oil with garlic and anchovies. Really nice with pasta and parmesan.

On the same pasta and parmesan type theme, miss out the anchovies and add olives, tinned kidney beans and pesto.

ooh, now I'm a bit spoilt for choice!! The frittata sounds lovely, but I'm not very good at things like that . Maybe I'll give it a go for supper since we're having an early dinner today
