Please could someone give me advice on freezing vegetables

i have ben given some veg which i am not going to get chance to eat in the next few days (carrots, cauliflour, courgettes.)

Can it be frozen and if so, what's the best way to do it (it, should i slightly cook them before freezing?)

don't think you can freeze raw carrots - they'd go all soggy when you take them out. Not sure about the other two. Can you not cook something (soup?) freezable?

I think cauliflower will be fine to freeze,

You can probably par cook them and then freeze the carrots.

Courgettes are evil and belong in the bin

meat to say cut the cauliflower into florets first, then freeze it.

most veg need to be blanched first but are then fine to freeze
some like courgettes can go a bit soggy when defrosted but are fine for cooking with

The only way I'll ever eat courgette is to slice it into batons and cover in breadcrumbs and garlic, then fry. It's actually lovely then. I just can't stand the mushness of marrow/courgette etc

Agree Jareth, mushy courgette is really yuk. But try chopping it quite finely and frying it in garlic butter for just a couple of minutes - yum. And really fresh, thin skinned courgette is good finely sliced and eaten raw. I'm a recent convert, having refused to eat it till I was in my 30s, having been totally put off by my mum's courgette as a child - now one of my favourite veg

def' need to blanch them first before freezing....just chuck them in boiling water for a couple of mins,take them out and cool before putting in the freezer.
Courgette soup is yummy,sounds disgusting but is really really nice.
