add in some chopped veg? onion/peppers etc
put a nice breadcrumb and cheese topping on and grill?

Mix mustard into the cheese sauce to make it more tasty and add broccoli and crispy bacon to give it more colour. Yummy!!!

Oooh yes - bacon (and lots of it!)
Handful of mixed veg (peas, sweetcorn)
Breadcrumbs
Stick some broccoli in it
Use a number of different cheeses (eg cheddar / parmesan topping)
I'll try and think of some others as I'm always trying to make cauliflower cheese more exciting!

brocolli is good, also add in some new potatoes for extra body.
I love powdered chiliies (stupidly can't remember what you call it) sprinkled sparingly on top with extra grated cheese and bung it under the grill for a few minutes.

I do a variation on a cauliflower cheese theme! Add some dijon mustard to the cheese sauce - gives it a bit of a kick! Transfer to an ovenproof dish and mix in some cooked pasta shells and cooked crispy mushrooms - then put under a hot grill until bubbling and any edges of exposed cauliflower florets/pasta shells start to brown.

I use reduced fat cheese and skimmed milk and therefore think this is healthy!

add leeks to the sauce.
slice par boiled potatoes and add to the top before putting in the oven.
Add paprika/mustard/cayan pepper to the sauce.
