easy summery main course ideas?

Whilst I've a good variety of more wintery recipes (fish pie, casseroles etc) can anyone inspire me with easy to prepare summery main course ideas, I'm running thin this time of year. My kids aren't that keen on salady items/raw vegetables so I'm used to doing side dishes for them.

I'm eating a lot of salmon!

Salmon with cajun seasoning, served with new potatoes, avocado and creme freche.

Salmon drizzled with thai sweet chilli sauce and sesame seeds, roasted then served with brocolli and either noodles or new potatoes.

Salmon drizzled with olive oil & herbs, roasted with cherry tomatoes and olives, served with cous cous or - you guessed it - new potatoes!!

Also loving pasta with fried halloumi pieces (with whatever else I have chucked in...red onion, cherry tomatoes, loads of garlic and black pepper)

Chicken drizzled with mixture of five spice, ginger, soya sauce, runny honey and baked in foil parcel with spring onion and carrot strips - served with noodles (with or without sesame seeds and chilli/ginger/garlic) and usually more brocolli.

BLT wraps served with tattie wedges

Homemade burger & wedges.

We still eat lots of 'wintery' stuff as well, though. Perhaps something to do with living on Scottish west coast...

Thats teuchter - love the name (I'm from Glasgow!).

I'll try out the salmon and chicken ones - need to be more adventurous these days.

How are the midgies these days?

Tortilla (Spanish omelette) can be eaten warm or cold.

We're fond of kebabs.... Children quite enjoy spiking their favourite veggies/fruit onto skewers with some chunks of meat. I prepare everything and give it a quick stir in some olive oil, soy sauce, balsamic vinegar and herbs. If you vary the ingredients you can ring the changes.

Cook in 10-15 mins under the grill. Serve with salad, jacket spuds, rice etc., etc.
