salmon fillets - inspire me please!

I've just got some salmon fillets out of the freezer.

I usually oven cook them in foil with a bit of butter and some fresh herbs, but would like to do something different today.

Any ideas?

A japanese/teriyaki marinade works really well with salmon.

Any combination of soy sauce/fresh chilli/ginger/spring onion/garlic/lime juice.

You can marinade the salmon in it before griling or do it in foil like you usually do.

Yum!

Or philly cheese and bread crumbs grilled on top of the fillet?

My amazing variations on the same thing:

add chili, lime, soy, coriander - Thai Salmon fillets

add lemon, butter, tiny splosh of wine - Lemon Butter Salmon

add capers, whatever is in fridge!

Grilling & frying sauteing (sp), too smelly & messy IMHO

honey, soy sauce, teriyaki sauce (or rice wine) 1 table spoon each. marinade for a while and put on the grill.

Cajun spices and a very hot skillet.... sear both sides to blacken and cook gently for a few minutes to finish off. Serve with something cool like a cucumber raita.

Cheese/herb breadcrumbs - lots of coriander and parsley and breadcrumbs with fine-grated parmesan - grill.

I think it was in one of the camping threads someone mentioned salmon marinated in coconut milk and lime juice. Would also be nice with a touch of fresh red chilli and some coriander to finish.

i mix together: 1 tbsp runny honey, juice and rind of 1 lime, 1 tbsp soy sauce and 1 tsp mustard and marinate fillets in it for a couple of hours then bake it and it is GORGEOUS!

We finely chop garlic and ginger,mix with a bit of olive oil,spread on the salmon,and then bake in the oven in foil.Really delish with greens like chard or spinach.
