Frozen spinach!

Help - ideas needed please! Somehow i have ended up with three bags of frozen spinach - am trying to make space in my freezer, so any ideas?

Am really stumped!

I throw frozen spinach in loads of things - risotto, lentil/bean type stews, curry, spag bol, Tomato & spinach sauce for gnocchi, in a tomato or creamy sauce for pasta - anything!

Also spinach and cheese muffins are good. As are savoury drop scones with spinach. Or filo squares with spinach & goats cheese & sun-dried tomatoes - very easy!

I make a cheese sauce and add loads of spinach, then eat with either baked potato, or inside pancakes with sprinkled cheese on top.

Spinach and ricotta quiche

You can add it to practically anything.

A nice simple curry with spinach added at the end.

Spinach soup. I keep frozen spinach in the fridge for just this reason. If I have frozen peas, I make it pea and spinach soup.

Fry onions with a little garlic, add spinach and stock (and peas). Simmer for 10 minutes, then cool and blitz with a hand blender with a little nutmeg. Season. Serve with a big dollop of greek yoghurt stirred in. The peas make it a bit sweeter than spinach by itself.

Oh, and "creamed" spinach is dead easy and a great side dish. I just cook the frozen spinach, stir in yoghurt/cream/creme fraiche depending on what in the house, squeeze in some lemon and nutmeg and salt and voila.

Defrost a whole bag ofspinach and drain/squeeze out as much water as poss. Add a tub of creamcheese and about 150g crumbled feta, a diced and cooked onion, an egg and seasoning. Cook in a flan dish for about 40 mins or use the mixture to fill filo pastry (triangles/parcels) and then bake until golden brown. Yum!
