Egg based main meals....

.. chickens are in overdrive and have lots of glorious eggs.

At least once a week we have omelette, quiche or fritatta. And of course breakfast concotions of dippy/fried/scrambled and egg mayo for lunch are in abundance

Am I overlooking any other supper dishes (our main meal is in the evening so it needs to be fairly substantial) to add a bit more variety???

What about

Cheese Pie (my Mums receipe)

Line 8in pie dish/cake tin with pastry

5/6 eggs (Depending on size whisked with a bit of milk.

Then add some dried musturd and as much cheese as you want. I make it quite thick pour into pastry case and cook for 30/40mins until light brown and set. Have with salad.

Or

  1. fry some chopped up smokey bacon until crispy then add and fry Left over cooked new potatoes until brown and crispy.

  2. Add some cooked cabbage and heat through
    Serve with a fried/poached egg or 2 per person.

You could try this:

8 slices of bread, buttered
some cooked ham
4oz or so grated cheese
4 eggs
pint milk
tspn mustard powder
salt and pepper

Lay 4 of the slices of bread in a lasagne dish or similar. Spread the ham out over the bread and sprinkle over the grated cheese. Top with the rest of the bread, so you have 4 sandwiches in the dish. Beat the eggs and the seasoning into the milk and pour over the bread. Leave to soak for 15 minutes or so. Bake at 180 for around 1/2 an hour until puffy, golden and set.

You can substitute the ham for tuna or leave it out altogether and use more cheese.

In a similar vein:

1 small baguette cut into 1/2inch slices, 4 eggs, pint of milk, salt and pepper, punnet of cherry tomatoes and about 4oz grated cheese.

Lay the bread in an oven dish. Scatter over the tomatoes and cheese. Beat the eggs, milk and seasoning together and pour over. Leave for 15 minutes or so and then bake at 180 until golden and set.

You could also try kedgeree, baked eggs, or ( favourite when I was a child) poached eggs on toast with cheese sauce and peas.

Very 70s, but what about a cheese souffle? Or Spaghetti carbonara, that uses up eggs. Although not quite 'based on', what about egg fried rice?

What about salads? Hard boiled eggs (I prefer them semi soft rather than chalky) are lovely in a salad, with some bacon bits, nuts and new potatoes chucked in to make it more substantial.

Rosti potatoes with a fried egg on top

Toad in the hole (not quite egg based, but..)

There are hard boiled egg curries, but I must admit I am not a fan.

Asparagus or tenderstem broccoli with soft boiled eggs (goes well with ham or similar)

French toast? Ok not a supper dish, but yummy nonetheless.

Ooo, I knew you lot would have some good ideas!!! Thanks so much.

Actually, we did have an egg fried rice stage a while back - bloody lovely - had forgotten that one.
