Replacement for tarragon in chicken tarragon

Was all set to make chicken tarragon (with shallots, mushrooms, garlic, white wine, creme fraiche) but Sainsbo's have let me down on the tarragon front.

In my garden I have mint, chocolate mint, oregano, dill, basil and flat leaf parsley as possible substitutes. I was thinking dill, although sparingly perhaps - whaddaya reckon?

I think the clue's in the recipe name, tbh!

Oregano plus white and cream is a simple Italian stye recipe I do fo lunch.

Sprinkle, black ppper, salt and organo over 2 chicken breats that have been pounded flat or cut into pieces, then sear in butter and olive until just cooked, then pour over a large glass of white wine and cream at the end. Leave on very gentle heat and stir well. Add a bit of water or more wine if sauce gets too thick.

Yes, obviously it won't be chicken tarragon. Perhaps my question then is 'in a creamy sauce for chicken recipe, which (if any) of these herbs do you think could could work'?

I think dill sounds nice - though not too much.

Think I'd stick with the parsley

Thanks guys, choices, choices...

Dill would be wrong. It's too delicate. Save it for the fish.

Oregano or parsely.

the closest thing to tarragon is fennel IME, although nothing is really quite like tarragon. are you anywhere near a garden centre? most sell it in pots in the herbs section during the summer.

If it were me, I'd wait until I could get the tarragon, even freezing the chicken if necessary. But then I adore tarragon.....

SylvanianFamily · 15/07/2010 12:06

I hate tarragon. It has such strong overtones of soap for me...

fishie · 15/07/2010 12:07

leave out the mushrooms and have mint.

I do love tarragon but I am thinking will probably be out of luck at the remaining supermarkets here and DP has the car so can't get to a garden centre.

Now I just have to decide on a herb and cobble together create a culinary delight for my ultra fussy parents!

don't suppose your parents grow it in their garden? you don't add it til the end anyway....

RabbitAndCo · 15/07/2010 13:28

What, you don't have any Pernod in your drinks cabinet?!

artifarti · 15/07/2010 14:02

Would Tia Maria work?

It would certainly add a little je ne sais quoi to your dish and no doubt impress your parents no end.

Present your meal as "Rich Jamaican coffee flavour chicken with a rum soul and a hint of vanilla and chocolate"
