Can anyone recommend a good vegetarian Indian recipe book? Preferably one that has things that don't take hours to make? Thanks.

I really like Madhur Jaffrey's Eastern Vegetarian Cooking - it's not just Indian, it has recipes from all over Asia/Middle East, so you can either do an all Indian or Chinese or whatever meal, or mix and match. I always find her recipes written in a very easy-to-follow style. Her World Vegetarian cookbook is good too.

I use this book a fair bit and it has tonnes of veggie recipies, India's Vegetarian Cooking

This book is fantastic, Fresh Indian. It's not a veggie cook book and does have (short) meat and fish sections, but it has loads of really easy and tasty vegetarian food.

I also recommend this blog for quick indian recipes.
