Fasting / 5:2 diet

Looking for ideas for brunch meals to take to work.

Hi, I'm going to start the fast 800. I thought I'd try two meals a day, one filling brunch and dinner. I run 3 morning's a week so want something satisfying on those days. I've been looking through some recipe books and seen some great filling brunch ideas but all require a bit of cooking. I also work so need something that can just be heated up in the microwave, eaten cold or just add hot water. Any ideas from people who have been doing this a while. Thanks.

How about the low carb wraps from the red book? I had one heated briefly in the microwave as a brunch the other day, made double the day before.

You could do double portions to make it more filling.

I used to make loads of sweet corn and spring onion fritters which freeze really well and then pop them in the microwave. That might work.

I make frittas in the microwave - mix 3 eggs with defrosted frozen veg & seasoning then cook it for 2 mins on High. You can cut it too and save portions if it’s too big for you.

Thanks for suggestions. Will give frittas a go. Also planning to usey marrows to make the courgette soup for the week. Might combine both for running days. Haven't seen the wrap recipie but will look.

I take these porridge pots to work www.sainsburys.co.uk/gol-ui/product/single-serve-pots-44/scotts-s-easy-pot-original-50g 164 cal per pot. Once I’ve added the hot water and stirred, I add quark and a large handful of berries and it comes in at around 300 cal.

I had the banana pecan muffin from the red recipe book today and thought of you OP. Would be a good work brunch I reckon. You’d want to make it fairly fresh, but not sure if you could make and freeze.
