I've been having a salad for lunch, a small snack in the afternoon and soup for dinner.

Just looking for some interesting inspiration 👍

Is the second pic (with the avocado, tuna and mayo) really 200 calories?

kittenkipping · 07/07/2021 21:32

Today I had egg with cream mushrooms and sesame seeds which works out at 213 cals (160 with no seeds)

Mine comes in a bit over 200 - say 250 max depending on how large the eggs are and how much else you use.

Two Warm soft hard boiled eggs (7 mins) - good quality capers and baby tomatoes - all rough chopped together with a wee bit of salt.

Good warm or cold. My favourite "packed lunch".

Shredded pile of pointed or savoy cabbage, or best of all spring greens or cavolo Nero, pan fried in water. Or same I’d steamed broccoli. A teaspoon of sesame seeds. Salt, pepper. Olive oil just a drizzle. Poached egg. Add a tablespoon of nuts that you like and chop quite finely. A little bit more salt and pepper. Sriracha sauce.

Also if you have a food processor that slices not grates, just feed in a small pile of stuff and then keep in a massive Tupperware for a couple of days and just eat it with oil and vinegar and salt and pepper or (without the fruit) use it as a base for your cooked meals like a stir fry or soup or bolognese. It really helps me to have an immediately ready salad to hand.

To make it just harvest a pile of random fruit and veg from your veg drawers- peeled carrots, cabbage of any kind, a tiny section of leeks or red or spring onions, celery, raw broccoli, celeriac, raw beetroot, whatever it is cut into sticks so you can get it into your food processor tower. If you’re only making it to eat as a salad and eating it promptly then it’s fun to add some fruit if it’s not a squishy kind- apples are great or hard peaches or other stone fruit, or kiwi fruits that are hard. Eat with oil and salt and vinegar if you like it.
