Not losing weight but want to eat better/healthier

Hope this is the right section to post in and sorry if this has been covered elsewhere - I’ve searched and not seen anything to help
I’m not trying to lose weight but have a friend that has followed the intermittent fasting/Michael Moseley book and having talked to her, I’d like to adopt some of the diet choices for health reasons.
Mainly cutting out more refined carbs and processed foods and eating a more Mediterranean diet. We’re vegetarian and both run a lot so I want to make sure I’m fuelling my body appropriately too. Can anyone recommend any cookbooks or similar I could use as a start point? My main thought is to change our breakfast and lunch choices as dinner tends to be home cooked and relatively healthy. Joe wicks cook books are quite good. I've got a couple of them and really liked them

I've also got davina McCall's smart cabs (I think it's called) but can't say I rated it.

There is a fast 500 recipe book too but no idea about the recipes

Thank you - I used to use his meat ones but haven’t looked at the veggie version one.
