mushroom ideas

newbie here- just started (first fast day) and have heard mushrooms are low in calories- any ideas on how to use them? just sautéed? any other suggestions?

They are indeed very low calorie, but if you saute them in oil or butter then you're probably going to add a lot of calories.

I like them in a microwave scramble - chop 2 or 3 mushrooms into dice or slices, and give them a 1 minute blast in the microwave. Add in eggs - 1 or 2 whole, or 1 whole and 1 white, as calories permit. Whisk well. Give another one minute blast and check for consistency - continue in 10 second bursts until the egg is set to your liking.

OR

use a large portabello mushroom as a burger replacement, or with pizza style toppings.

Thanks, Mel, I shall try that with gram flour batter as an egg replacement. Works fine in a Spanish omelette.

I add mushrooms to any stew-type dish - along with celery, another low-cal veg.

I love eggs, but I get put off omelettes and scrambled egss because of having to wash a grotty pan afterwards.
So you have made a shamelessly lazy woman v happy

I fry them with no oil in a non stick wok. Today I had them with stir fry veg. Next FD I plan on lentils, mushrooms and a poached egg. With Lea and Perrins.
