Fasting / 5:2 diet

Best 5:2 Cookbook?

Just started 5:2-ing and had a look on Amazon for a cookbook, but was completely overwhelmed!

Looking for something with really simple, down to earth recipes - I'm so Not going to be cooking scallops on a Fast Day! Would love to hear what has worked for all of you seasoned 5:2-ers....

Mimi Spencer's is excellent - especially if you're a foody. I now live off her baked fish and veg combos, and DH positively demands fast day meals. Also thoroughly recommend Hairy Dieters' cook books. Very tasty, never feels like you're depriving yourself.

Lots of suggestions on the recipes thread linked above.

Simple meals - slice of ham with a salad (easy on the dressing and mayo)

Grilled fish with asparagus. Or steamed leeks with a triangle or 2 of laughing cow stirred through them.

Meat and 2 veg but no potaotes.

Omelette.

Soup.

I acutally enjoy cooking, and scallops on a fast day are marvellous! I use the Hairy Dieters book, Gok's Wok, but also tear pages out of magazines and search blogs and Pinterest.
