Fasting / 5:2 diet

Talk about intermittent fasting and 5:2, including what’s worked for others. Mumsnet hasn't checked the qualifications of anyone posting here. You may wish to speak to a medical professional before starting any diet.

Anyone recommend any 5/2 dinners I can freeze and microwave please

Sorry for preponderance of 5/2 threads I am starting tonight - this is my fourth! But I have all the enthusiasm of a convert.

Can anyone suggest any suitable meals I can freeze for fast day suppers and then microwave when needed. I am trying to time my fast days for days when dh works late so I'd be eating alone anyway but by time I have got kids to bed alone I have no desire to cook.

Easy Scotch broth - two grated carrots, one chopped onion, half a grated swede and a small handful of barley. Fry off the veg, then simmer with the barley and two stock cubes until it's all soft - usually 20 mins to half an hour. I always rinse the barley first. Serves 5 - 6.

I freeze individual portions in takeaway tubs, but I think sandwich bags would work just as well as long as you wait until it's cooled down.

Order, my Harissa chicken lentil soup is really good to freeze - recipe on the recipe thread (sorry, can't link, on phone) but basically - diced chicken thigh fillet and onion in Harissa paste, add brown lentils and diced root veg, simmer in chicken stock. I make up a big batch with only enough stock to simmer, so I'm not freezing huge quantities of liquid - then defrost a portion, add more stock and some fresh green veg, simmer till tender.

I've just batch cooked this aubergine stew It's really tasty and leaves you with enough cals left to have some couscous or similar with it.
