I need to get a passport for my DS, should I wait to get one after Brexit? Will the type of passport make it any easier or harder to travel?

Assuming you mean a uk one it will make no specific difference to his rights whether he gets one pre Brexit or post. Everyone's rights are changing. Everyone will have to join the Non-EU queue at any border in Europe.

Yes, I'm sure Bellini is right. I think it makes sense to apply before brexit though, it seems there are likely to be an inconceivable amount of unexpected 'difficulties' so it's probably sensible to just apply now so it's sorted.
