Batch cooking - need some ideas please!

I do a fair bit of batch cooking for my dad. He lives alone (with support from carers) so most weeks I'll batch cook a bunch of stuff for his freezer. But I need some inspiration on new things to try as I'm getting a bit boring!! For context, he has problems chewing so everything has to be easy to swallow or blended.

Things I've tried so far:
Shepherds pie
Chicken and mushroom sauce with rice (chicken is blended into the sauce)
Pasta bake
Fishcakes and peas
Chicken (blended) and tater tot casserole
Chilli
Fish pie
Meatballs and mash

He supplements these meals with bags of steamed veg but I'm aware he's often having a 'hot dinner and veg' and it does get a bit boring. I'd much prefer to cook than for him to have ready meals as I think home cooking is healthier but if anyone has any ideas of new things to try, I'd be grateful.

P.s he can't have spice

Lamb casserole or minced lamb
Braising steak/beef casserole
Macaroni & cheese sauce
Would he eat a quiche with some sort of potato? That could be mashed and soft but he would still have the flavour.
Is he of the age he would like liver and onions?

I know home cooked is probably best but, for a change of flavour occasionally, there are meals available when people have difficulty swallowing that he might fancy. They do look like plastic play food but that’s because they are in the shape of the food!

Chunky soups could work, as when blended they'd have some texture for him. Leek and potato could be good for thicker texture.
