I keep getting pestered by potential bidders asking for a BIN price.

Assuming I wanted to set one, can I? or is it too late?

Ebay says:

If you need to make changes later

You can?t switch between a fixed price listing and an online auction with a Buy It Now price. However, in some situations, you can add, edit, or remove a Buy It Now price.
For auction-style listings: If more than 12 hours remain before the listing ends, you may be able to add, edit, or remove a Buy It Now price as long as the listing has not received any bids.

Thanks! I think I won't change anything at this stage. I am finding the whole thing strangely addictive. I am new to this whole ebay thing.
