Newbie and I need help please

Right so I needed some cash and choose some stamps to sell. Managed to list. Do not understand the fees thing but hopefully not too bad. Anyway they are listing for a week. So what do I do now ?! Do I just leave it for a week and then when listing has ended click on highest bidder? Sorry to be such an idiot but a little confused. I’ve only ever bought before

It's all automatic. You will get an alert when you get bids, when the auction ends and when the buyer has paid. Some of my recent listings went on with Best Offers so I was getting silly offers come through - I just declined them. Don't send until you've had the payment and makes sure your item(s) are covered adequately by the postage method you are using. If it's collection only make sure it's cash on collection only and don't accept paypal.

Can I ask why cash on collection and not PayPal for collection only? Wouldn’t they have to pay by PayPal first anyway?

To guard against getting scammed. A scammy buyer could pay with PayPal, collect the item then a couple of days later, claim to have not received it. As you won't have proof of delivery, PayPal will refund the buyer. I would never and you would never but it does actually happen. A direct bank transfer is ok but that can make a buyer wary they will get scammed.

Cash isn't 100% risk free as there's the possibility of counterfeit notes, but if the buyer is in that league you're on to a loser however they pay (or don't).

If a buyer pays by PayPal for a collection only item you should refund straight away. You can't remove PayPal from listings which doesn't help.
