What should I do?

I recently sold an item worth £60. Sent it with myhermes and it was delivered on Sat afternoon.

The buyer is stating they never received the item although my hermes have sent me the signature that was obtained.

I'm guessing it isn't what the buyer wanted so they are trying to pull the wool over my eyes.

What will happen if they open a item didn't arrive case?

If they open a case ebay will ask for the tracking information, which will show that it has been received so they should refuse the refund request

add the tracking number to the transaction in eBay now. The buyer won't win a case as you have proof of delivery.

You told the buyer you have proof of delivery and they signed for it?

I added the tracking info as soon as I posted it.

I've sent the buyer the conversation I had with hermes and a photo of the signature that hermes sent me.

So am I right in thinking ebay won't refund money as tracking etc says delivered

no - the buyer won't win a case so therefore won't get a refund.
