Why are buyers obsessed with BINs, back in the day eBay was an auction site!

As it is, if person decides to buy it now at whatever crazy price I offer, how on earth do I do that, can I indeed do that on an item that has been bid on?

It has changed a lot. Ignore completely and just do auction- if they ask to buy before the end just refuse.

You can usually end an auction early even with bids as long as there is more than 12/24 hours to go, sorry i cant remember the timescale.
There should be a little tab in your 'my eBay' section next to the item that is listed which has a drop down box.
Some people sometimes need something desperately and don't want to wait for an auction to end, or they may not be about when it finishes.

I have had someone say they wanted it early for a birthday but that isn't my problem and I want the most - and that you won't get until the end. I watch- I don't bid until the end.
