The person 'bought it now' and paid then asked to collect tomorrow.

Isn't it best to get cash when collecting? Because theres no way to prove it was collected if they complain to ebay they never recieved?

no - you must only take cash, printed receipts mean absolutely sod all in the face of a not received dispute

if they don't pay by cash they can't collect - absolutely no exceptions. Refund them via paypal and tell them to bring cash
