Why do some feedback show the value of the item sold for and some not? Can I change my settings so that the value of my item doesn't show?

You have to select private auction when listing your item.
Beware though, it does put some people off bidding as it means the seller can bid on their own item to raise the price. I tend not to bid on private auctions.
