I'm pre diabetic and my blood glucose spiked to 11.1 the other day after I had some cornflakes (no sugar added). I'm now strictly low carbing and checking my blood glucose after food to keep track.

I went onto YouTube and found a video about soaking chia seeds in full fat milk or cream, which I've done and they're quite nice. You can add nuts and some berries if you like.

Does anybody have anything similar, just so I can pretend I'm having cereal? Any useful ingredients or tips?

Cereal isn't great unfortunately. Granola with yoghurt might work better, or even pastries like chocolate au pain. The fat content lowers the glucose rise

I like ground flaxseeds mixed with some Greek yoghurt (fage 5% is lowest carb), a good splash of water, and some frozen raspberries. Leave it in the fridge overnight (the flaxseeds soak up a lot of liquid, and the raspberries defrost into a nice mush, so more juicy than fresh). You don’t need much flaxseed, they swell up, and are very filling.

Maybe look up keto granola recipes too.

Arla lactofree milk (whole or semi skimmed) has less carbs than regular whole milk. (Not all lactofree milks are lower, but the Arla one is).
