Pre-Diabetes Diet on a Budget

Hi all,

I had GD when pregnant and controlled it with a very strict low carb diet. 18 months on and I decided to start testing morning glucose again - I'm not surprised but it's high (this morning was 6.4). I feel like I do know the basics of getting back on a LC diet again, but my financial circumstances have changed significantly due to losing my job on mat leave (I found another job but earn much less to fit with childcare) so now on a very tight budget and lacking inspiration on how to low carb on a budget. Would be very grateful for any ideas and inspiration Smile

Lots of omelettes, cheese, cauliflower cheese and fatty (cheap!) cuts of meat - chicken legs, drumsticks, pork belly, then add in your green veg (broccolli is seriously cheap).

I'm very low carb, high fat and find it cheaper than shit processed food. I don't eat as much for one thing but you can cut out all the 'on the run' food, snacks and drinks we often waste money on. Water is free and alcohol is out, so I think its really easy to save cash on LCHF.

Thanks Mooncup - great ideas! I haven't had cauli cheese for ages! I do usually cook most things from scratch and I also have a slow cooker I can hopefully use to help. I remember when pregnant with GD I sort of stopped being so hungry after a few weeks of the diet so hoping that happens again.

Cauli cheese made with full cream and cream cheese and whatever you load it up with (garlic, bacon, spring onion etc) is a food of the gods.

You will lose your appetite again. It is magical.
