Winter cycling with a kiddo

Said kiddo to be in a bike seat, so not peddling. We won't be going far but it's quite exposed and windy where we live so he needs to stay warm, and it would be nice to still be able to go on jaunts at the weekends if the weather allows.

What do we need? I've got him a good three in one waterproof jacket and I'm on the lookout for some secondhand salopettes (sp?!). I have a buff he can wear as a scarf, or even a snood under his helmet, and fleece mittens, and wellies. I might get him better mittens, maybe some ski types ones so they're waterproof too. We have good lights and I wrapped a hi viz jacket round the seat for visibility. We won't be out after dark anyway. He's got some joules stretchy leggings from last year which I think would still fit as a base layer under trousers if it gets really cold. Warm socks etc. I want a saddle cover for me (or a toddler last a plastic bag!) so I don't get a soggy bum!

Can you buy waterproof covers for baby seats, so if we have to park out in the rain the seat doesn't get full of water?

Interested too.
But can't deal with bike mounted seats, so using a trailer...
Bit more protection, but any experiences useful.

I'd agree with the base layers - maybe tights underneath leggings?

I'm sure I've seen aprons for covering the laps of bike seats but I don't think the term is right for nothing is coming up when I Google. Kind of thick fleecy and waterproof lap blankets..

When DD and DS were little and in bike seats, we had a hi-viz poncho thing which went right over the bike seat to keep the wind out. Worked very well.
It's a long time ago though so not sure where we got it from.
ours was a cheapo version but a bit like this
