Weekend away - North, South, East or West considered!

Myself and himself are planning to feck off for a full weekend with no kids or animals or other people. We want romantic with good food, if possible no kids or not too kid friendly, somewhere with maybe a spa or something to really treat ourselves. Any recommendations? It is to be in March so may be fairly late to book some places.

Castlemartyr Hotel is lovely and I really want to go to Monart in Wexford and Galgorm in the North. Monart is adult only I think.
Kilkee Castle in Wicklow has a nice castle environment.
