I can never get it right! Not the way my granny used to do it 😭

Mine is untraditional as I hate scallions, but it’s new potatoes boiled, mayonnaise, hard boiled egg chopped roughly, wee bit of mustard and chives. Bit of seasoning. Unreal!

Waxy potatoes, half mayo, half salad cream, spring onions chopped into rings with the whites stirred through for taste and the greens on top for garnish.

Ooh and obvs a tiny bit of salt but a good grind of pepper.

You need bacon lardons and gherkins.

And NO salad cream!

Don’t forget the white wine vinegar.

My granny didn’t have lardons or gherkins but always had a drop of salad cream 😂

I do red onions, mayo plus white wine vinegar and a drizzle of olive oil, baby gherkins and chopped flat leaf parsley on top.

I mix the mayo with a bit of boiling water to thin it, and make it with warm potatoes and scallions and parsley . It's e best potato salad e in the world and I want some now 😆
