San Lorenzo is really central and a great place (based on work trips) -the Nutella cheesecake is brilliant and service is lovely.

Another vote for That's Amore. It's a teeny tiny restaurant.
Monkstown is lovely to visit.
It's always busy and parking can be a wee bit problematic but a space always turns up. It's on street paid parking. But you can tap your credit card.
You could walk Dun Laoghaire East pier before or afterwards.
You could get the DART out, all the way to Greystones which is a lovely bustling village too.

I'd recommend caffe napoli which is really close to Pearse Street Train Station.

Also, Da Mimmos. Okay it's tiny and a bit farther out of town, but the food is gorgeous and the canolli is amazing.

Actually it's the restaurant website you need rather than the cafe:

Crudo in Sandymount is lovely too. It's part of the Dunne and Crescenzi stable - a well known small Italian restaurant group run by a husband (Italian) and wife ( Irish ) team.

The nicest Italian in Dublin is a place called Mamma Mia. Small place.lovely atmosphere , great food and very reasonable so order whatever you want. It’s Half inside half covered outside. Doesn’t look like much but food is great. I find places like Carluccios aren’t authentic and are over priced. It’s around 15 min walk from Trinity. No issues on price with us but will always choose mamma Mia!

Well, that's amore is booked!
Thank you all.
Mum has been quite ill recently though so I'm hoping she's well enough to go.
Just need to figure out the parking situation!

Honestly, it's not that bad for parking. There are beautiful streets with some of the most beautiful houses in Dublin there. Space always comes up. Have a lovely time.
