I found several tins of kidney beans at the back of the cupboard and I need some inspiration for cooking them.

grill sausages the cut up and add to pan of chopped onion, garlic, red pepper, tin of kidney beans and/or mixed beans, black olives, chilli flakes, tin of cherry tomatoes. Amazing.

I like them in a salad with chopped fresh tomatoes, roasted cumin seeds, cayenne, salt and olive oil.

Passata, mushrooms, kidney beans, sweetcorn, chilli and other spices and you have nice "chilli" for rice.

Kidney bean curry

Tin of kidney beans
55g plum peeled tomatoes
2 green chillies
25g fresh garlic
60ml cooking oil
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 large onion
1 teaspoon tandoori masala
1 teaspoon turmeric
1 teaspoon garam masala
30ml lemon juice
1 teaspoon tomato puree

Fry the usual bits and simmer for 20 minutes.

Its yummy its fine without the chilli and garlic if you don't have them in.

Louisiana red beans and rice. Typically with a ham hock or other Sunday leftover, celery, green bell pepper. Onions garlic thyme and Worcester sauce.

I love refried beans.

Also made Jamie Olivers veggie chilli recently which is made with roasted sweet potatoes and kidney beans. Was delicious. I added a green pepper to his other ingredients. Really was nice!
